Is unfollowing rude?
Generally no — especially for people you're not close to. Muting is more invisible, but unfollowing is a normal part of managing your feed. Very few people notice, and fewer take it personally.
What's the difference between unfollow, mute, and soft-block?
Unfollow removes their posts from your feed; they can still see yours. Mute hides their posts without them knowing. Soft-block (removing and re-blocking) removes them as a follower of your account.
